Orange Pumpkin Balls

Ingredients
Instructions
  1. Place all the ingredients in a food processor and process until a ball of dough is formed.
  2. Roll** a level tablespoon of the mixture into balls.
  3. Refrigerate the balls for 30 minutes or longer to allow them to firm.
Notes
Sweet potato purée can also be used.

**You can use a cookie scoop to form the balls.

Variations: Use applesauce instead of pumpkin purée and add ½ teaspoon of vanilla powder, 2 tablespoons of cinnamon and ½ teaspoon ground ginger for delicious Apple and Cinnamon Energy Balls!
