"Notato" Arrowroot Puree

Ingredients
  • 10 arrowroot tubers, peeled
  • 1 medium onion, chopped
  • 2-3 garlic cloves, minced
  • 1 teaspoon ground ginger
  • ⅓ cup bone broth*
  • 2 tablespoons solid cooking fat
  • ¼ teaspoon sea salt or to taste
Instructions
  1. In a medium-size saucepan bring water to a boil, add the arrowroots and cook them for 15 minutes over medium heat, set aside to cool.
  2. While the arrowroots are cooking preheat the cooking fat in a skillet and cook the onion until slightly browned, about 5 minutes.
  3. Add the garlic and cook until fragrant, up to 1 minute.
  4. Transfer the onion and garlic together with arrowroots, bone broth, ginger, garlic and salt to a food processor and process until smooth.
Notes
*You can also use coconut milk or coconut cream instead of bone broth and/or add a pinch of turmeric for a lively color!
