Gourd Luffa and Beef Tongue Stir Fry

Ingredients
  • 1 ½ cup cooked beef (or lamb) tongue, diced
  • 2 cups gourd luffa,* ridges removed
  • 1 medium carrot, peeled and sliced
  • 2 tablespoons coconut aminos
  • 3 tablespoons solid cooking fat, divided
  • 1 small yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 inch ginger root, grated
  • Fresh thyme for garnish
  • ½ teaspoon sea salt or to taste
Instructions
  1. In a non stick frying pan preheat 2 tablespoons of fat.
  2. Add sliced carrots and cook stirring for about 5 minutes over medium heat (medium high heat for a standard cookware), until slightly golden on both sides.
  3. Add the gourd luffa, stir and cook for 5 more minutes.
  4. Add the onion and cook for another 5 minutes, stirring.
  5. Next add the garlic and ginger and cook until fragrant, about 1 minute.
  6. Lastly add the remaining one tablespoon of fat, coconut aminos, sea salt and diced meat, stir well and cook for 3 to 5 minutes.
  7. Garnish with fresh thyme and serve.
Notes
*You can use zucchini instead of gourd luffa if the latter not available in your area.
