Instructions
  1. Mix the julienned carrots with salt and set aside for 15 to 20 minutes.
  2. After the time has elapsed squeeze out as much water as you can from the carrots.
  3. Mix in the ground ginger and coriander into the carrots.
  4. In a skillet heat one tablespoon of cooking fat over medium high heat, add the onion and cook until slightly translucent, 1 to 2 minutes.
  5. Add the spicy carrots and cook for a minute.
  6. Add the coconut aminos, coconut vinegar, and second tablespoon of fat and cook for 7 minutes over medium low heat while stirring frequently.
  7. Lastly, add the minced garlic and cook for 2 more minutes while stirring frequently.
  8. Garnish with coriander leaves and drizzle with lemon juice.
Notes
*You can omit coriander if you are on the elimination stage of the AIP and use an additional teaspoon of ginger powder instead).
