Avocado Mango Salsa (Nightshade-Free, AIP) - Zesty PaleoThis is a love story between Avocado and Mango. They met, fell in love and lived happily ever after, as illustrated in this avocado mango salsa recipe. 😉 They brought up a lot of zest into their relationship by inviting Lemon, Ginger, Shallot, Cilantro and humble Salt to join their company.

However, this story wasn’t that rosy from the very beginning as both Avocado and Mango started to compare each other in order to determine who was the best or a key ingredient in the avocado mango salsa. Avocado said: “I am the best because I am high in fiber and vitamin E”. Mango responded: “No, I am the best because I have a much higher water content and more vitamin C and much more vitamin A”. To which Avocado replied with a zinger: “Well, you may be rich in vitamin A, but I am extremely rich in B vitamins, which are crucial for various important bodily functions, including nervous system. Besides, I am very low in sugars!” Mango looked at avocado scornfully and said: “I may be a bit high in natural sugars but these very sugars make me yummy”. Avocado grinned and responded: “I am a way higher in healthy fats that also make me yummy. I also have a hefty amount of vitamin K and I doubt if you could beat me on this one!” …
This discussion lasted for quite a while and all other guys started to feel insignificant and bored, to the extend that they decided to leave this ever arguing couple. In the end, Avocado and Mango were left alone, facing each other. And, despite the fact that they’ve enjoyed each other’s company so far, they realized that something was missing as both, Avocado and Mango, began to feel bored when abandoned by the little folks. They were bored to the extend that they didn’t even want to continue arguing any more. They sadly looked at each other and decided to go separate ways. At that very moment little Shallot came back running as he had lost his green belt and was looking for it everywhere. Avocado and Mango were so happy to see this little guy coming back and they prayed him to return with the rest of the folks.  At that very instant Avocado and Mango perceived Lemon with Ginger and Cilantro with Salt walking back in pairs, wondering why Shallot took so long.  They were tired of waiting for him and just didn’t want to leave without him…

This concludes the story of Avocado and Mango reunited in this avocado mango salsa, surrounded by their little flavorful friends, happy ever after.

Ingredients
  • 1 medium avocado, diced
  • 1 medium mango, diced
  • 1 shallot, chopped
  • 4 tablespoons lemon juice
  • ½ teaspoon ground ginger
  • 2 tablespoons fresh cilantro leaves, chopped
  • ⅛ teaspoon sea salt or to taste
Instructions
  1. In a small bowl whisk together the lemon juice, ginger and the salt.
  2. In a serving bowl combine all the ingredients, add the sauce and mix gently to incorporate.
  3. Serve as a zesty addition to a salad or with seafood.
Notes
Variations: Stir in 1-2 teaspoons of citrus zest (orange, lemon or lime)
