“Easy” is the way to go, when it comes to snacks and desserts. These lemon coconut fudge bites are easy to make and fun, given that their liquid form with a capacity to solidify adapts perfectly to all silicone moulds (even to the most sophisticated ones). I used this particular non-stick silicone mould to make the little candy bites which, once hardened, pop out easily out of moulds and right into hungry mouths!
It is important to use extra virgin coconut oil for this recipe as it has its unique flavor which is missing in a more refined one. You will also benefit more from numerous health benefits of coconut oil, as it is the richest source of medium-chain triglycerides and lauric acid. Medium-chain triglycerides are easily absorbed and used as energy by human body, they also modulate metabolism and help to maintain healthy weight. Lauric acid, on the other hand, has antiviral and antibacterial properties. Therefore, in my opinion, these lemon coconut fudges constitute a nearly perfect treat: apart from being very healthy, they are fast and easy to make, satisfying and refreshing. There is only one little drawback: they thaw fast, so do not procrastinate and enjoy them right out of the fridge!
- 1 lemon, juiced and zested*
- 2 tablespoons honey
- ½ cup coconut butter
- ½ cup extra virgin coconut oil, melted
- Combine all the ingredients in a food processor and process until smooth.
- Pour the batter into the silicon mould and refrigerate until fudges harden, 30 minutes minimum.
- Pop the fudges out of the mould and enjoy!
You can also add a pinch of turmeric for a lively color. To make "chocolate" and orange fudges add 2 tablespoons of carob powder.
