Sardine Pâté with Plantain Flatbread
 
 
Equipment Needed: baking sheet parchment paper food processor citrus juicer microplane grater
Serves: 4
Ingredients
  • coconut oil
  • 2 green plantains
  • ¼ cup cassava flour
  • 1 cup bone broth
  • ¼ teaspoon turmeric powder
  • 1 lemon
  • 2 cans (3-4 ounces each) sardines in olive oil
  • 2 garlic cloves
  • 2 tablespoons palm shortening
  • 1 bunch of chives
  • olive oil
  • salt
Instructions
  1. Preheat oven to 400° F.
  2. Line baking sheet with parchment paper and coat with small amount of coconut oil.
  3. Peel and chop plantains roughly and combine them in a food processor with the cassava flour, bone broth, and turmeric powder. Process until smooth batter forms.
  4. Spread batter evenly on baking sheet, place it on the lower rack of the oven and bake for 25 minutes or until crisp.
  5. Meanwhile, make pâté. Remove zest from lemon with grater and squeeze juice from lemon. Combine juice, zest, sardines, garlic, palm shortening, and chives in food processor until smooth. Transfer to serving bowl.
  6. When bread is finished, remove from oven and cut into portions, drizzle with olive oil and sprinkle with salt and serve with pâté.
