If you had a chance to read a couple of my recent posts you should be aware of the fact that I kept on mentioning Instant Pot… Today I want to lift the veil of secrecy by sharing with you very exciting news: the Paleo AIP Instant Pot cookbook is now available!
Writing a book of such a scale could take years. However, due to the collaborative efforts of a team of the AIP bloggers and the entire dedication of Eileen Laird, this cookbook is made available to you in a fraction of the time. Everyone involved in this project did an amazing job! My special thanks go to Eileen Laird, who did a tremendous amount of work, coordinating the whole project from start to finish. My humble contribution to the e-book consists of two recipes, one of which is exclusive to the book. It may seem as a minor contribution, but developing these recipes took quite a bit of time, as I kept on adjusting ingredients and spices in order to balance out flavors. And I am sure that each individual contributor did the same.
You might think “Oh no, another cookbook…” However, it is not just another cookbook. The Paleo AIP Instant Pot cookbook is special as it is written by the bloggers, personally affected by various autoimmune conditions, therefore all the recipes are free of common allergens. There is also a tiny section related to basic reintroductions, which can also be handy when you just start reintroducing some of the foods. And by this I mean a fast method of cooking, which is a huge time saver!
I totally wish I had the Paleo AIP Instant Pot cookbook when I just started my healing journey! I remember when I bought the instant pot I was trying to figure out what on earth could I prepare so that the dish wouldn’t appear bland. As I had no savoir faire with the instant pot I started very slowly by steaming vegetables, making broths and pulled meat. As I gained more experience I introduced offal and seafood. I kept on experimenting by working with my favorite flavors but gosh, this book could be such a great help for me then! Imagine, you can even make condiments and desserts in the instant pot! Indeed, this e-book could be a blessing for me as I would jump start on making yummy meals from the very beginning! Another reason I would definitely invest in this Paleo AIP Instant Pot cookbook is that there are so many citrus flavored dishes – something I was desperately looking for at the beginning of my personal journey to health.
Besides, with this e-book you will have the possibility to use instant pot extensively in the kitchen. I recently returned to France, where many people live in small apartments, with tiny kitchenettes. Just to give you an idea of what you will find inside I would like to share with you one of the delish recipes featured in the e-book.
Pork Vindaloo
This recipe is created by Martine Partridge of Eat Heal Thrive
Ingredients:
2 pound boneless pork roast,
trimmed and cut into 1-inch pieces
1 medium onion, diced
3 tablespoons apple cider vinegar
4 to 6 cloves garlic, crushed
2 teaspoons grated fresh ginger
1 teaspoon honey
1 teaspoon ground turmeric
1 teaspoon sea salt
½ teaspoon ground cilantro
½ teaspoon dried basil
½ teaspoon dried dill
½ teaspoon ground cinnamon
⅛ teaspoon ground cloves
1 cup bone broth
¼ cup chopped fresh cilantro
Method:
1. Place the pork in the Instant Pot stainless steel insert. Add the onion, vinegar,
garlic, ginger, honey, turmeric, salt, ground cilantro, basil, dill,
cinnamon, and ground cloves. Mix well. Cover and place in the refrigerator
to marinate for at least two hours.
2. Remove the stainless steel insert from the refrigerator. Place back in the Instant
Pot and stir in the broth.
3. Close and lock the lid. Press MANUAL for high pressure. Set cooking time to
15 minutes. Once time is up, allow the pressure to release naturally for 10 minutes,
then quick release any remaining pressure.
4. Stir in chopped cilantro and serve.
