As a result of this, many people tend to place cooking in the end of their “to do” list. Yet, it’s essential if you have an autoimmune disease. I’ve heard stories of people living with autoimmune conditions, who consciously continue to eat out, just because they don’t have time to do all the cooking. So sad!

MY CONTRIBUTION RECIPE: SARDINE PATE WITH PLANTAIN FLATBREAD
Finally, to give you further insight of what you will find in the book I would like to share with you one of my contribution recipes. This is one of those recipes that I cook quite often because guess what? It’s not only delicious and nutrient dense but also fast & easy to make!
- coconut oil
- 2 green plantains
- ¼ cup cassava flour
- 1 cup bone broth
- ¼ teaspoon turmeric powder
- 1 lemon
- 2 cans (3-4 ounces each) sardines in olive oil
- 2 garlic cloves
- 2 tablespoons palm shortening
- 1 bunch of chives
- olive oil
- salt
- Preheat oven to 400° F.
- Line baking sheet with parchment paper and coat with small amount of coconut oil.
- Peel and chop plantains roughly and combine them in a food processor with the cassava flour, bone broth, and turmeric powder. Process until smooth batter forms.
- Spread batter evenly on baking sheet, place it on the lower rack of the oven and bake for 25 minutes or until crisp.
- Meanwhile, make pâté. Remove zest from lemon with grater and squeeze juice from lemon. Combine juice, zest, sardines, garlic, palm shortening, and chives in food processor until smooth. Transfer to serving bowl.
- When bread is finished, remove from oven and cut into portions, drizzle with olive oil and sprinkle with salt and serve with pâté.
